The serving staff circle like airliners on holding pattern. Precisely spaced: eleven seconds. Then the shortest possible pause to glance at the table. Is there anything required? Hardly, as I'm alone, and no food has yet arrived. Then onward, ever-circling, exactly like the fish in the row of cramped tanks along the back wall.
